Get this vegan chilli going in the slow cooker and you'll come back to a comforting dish to enjoy with rice, avocado, dairy-free yoghurt, coriander and lime wedges. But I thought I would suspend my disbelief and give it a try. The only problem is I didn't realize that the spice I had was pure ground chili. It was not a spice mix, it was pure ground up chilis.

Instructions to make Vegan Chili:
  1. Make Dry beans or use canned beans but watch your sodium contents.
  2. With a low flame under your pot add water & Impossible meat, chopped meat & cook until brown
  3. Add in beans, diced tomatoes, tomato sauce, green pepper, mushrooms & corn. Season to your own liking
  4. Cover & cook on low heat for 35 minutes.
  5. Serve over rice or eat it by itself.

The only problem is I didn't realize that the spice I had was pure ground chili. It was not a spice mix, it was pure ground up chilis. Whereas what these other recipes were using. Add the garlic, chili powder, cumin, smoked paprika and oregano. Add the diced tomatoes and their juices, the drained black beans and pinto beans, vegetable broth and bay leaf.
