Coat each side of chicken breast with olive oil and lay in baking dish. Sprinkle each side with spice mixture. If you don't have a meat thermometer, then cut slit in breast and make sure the meat is white. Spread the softened butter over entire surface of chicken, and sprinkle liberally with salt and pepper.

Instructions to make Perfect Baked Chicken:
  1. Clean chicken by removing any fat, tendons, etc. Set aside.
  2. Mix spices in a bowl. Set aside.
  3. Preheat iron skillet, or dutch oven on stove top.
  4. Preheat oven to 400°F.
  5. Sprinkle spice mix on chicken, both sides.
  6. Put butter and oil in skillet and let get hot. Brown chicken on both sides letting it get a nice brown sear on it.
  7. Cover skillet or dutch oven with lid or aluminum foil and place in preheated oven.
  8. Let bake for 25 minutes or until juices run clear.
  9. This chicken can be eaten as is. Shredded for tacos, cut up and used in casseroles, etc.
  10. I got this recipe online a while back and modified it to my family's taste.
  11. This recipe calls for 4 boneless skinless breasts, but I used a pack of 3 large ones when I took these pictures. You could always adjust to what you have 2- 4 chicken pieces. Also, could use thighs, drumsticks, bone in, bone out, doesn't matter!!!

When chicken seems done, insert an instant-read thermometer into the breast, then the thigh. Remove baking dish and transfer to a cutting board. Cut against the grain and serve.
