- Cover with foil that’s been sprayed with nonstick spray and bake for 30-40 minutes. Uncover and continue baking for another 30 or so minutes, til browned on top and the liquid has reduced. Allow to sit for a few minutes before eating it.
Spread the soup mixture over the chicken. Dice onion and place in a bowl with cottage cheese, sour cream, parmesan cheese, parsley, cayenne, salt and pepper. Stir to mix and add chicken and potatoes. Stir to mix and pour into prepared pan. Add the diced chicken to the remaining olive oil/hot sauce mix and stir to coat all the chicken.
