  2. Get 1/2 cup butter or margarine

Place chicken in a roasting pan or high-sided large skillet breast-side-up with the remaining onion, garlic, lemons, and herbs, then add the chicken broth. Place the onions, carrots, and fennel in a roasting pan. Spread around the bottom of the roasting pan and place the chicken on top. Place chicken in a roasting pan, and season generously inside and out with salt and pepper.

  1. Preheat oven to 375
  2. In a small microwave safe bowl heat butter until soft, not melted. Add the seasonings and liquid smoke, set aside
  3. Place chicken in a baking dish and remove insides if any. Rub the outside, inside and under the skin with butter mixture.
  4. Wrap chicken or top of the dish in aluminum foil. And bake for an hour and a half or until chicken is done.
  5. Once chicken is done turn the oven to 400. Remove the foil and brown the skin.
