  1. wash chicken.
  2. rub chicken with 1/2 the butter.
  3. LIBERALLY sprinkle with salt, pepper, garlic powder both outside and inside cavity.
  4. cut onion into quarters and celery into 6" peices
  5. put onion and celery and remaining butter in cavity
  6. put flour in baking bag and put chicken in bag. Pierce 4 holes in bag.
  7. bake at 375° for 45 min
  8. I use this for Thanksgiving because there are only 4 of us… not enough for a Turkey.
  9. *** if you bake in oven, without baking bag then put in roaster, or cover pan tightly with aluminum foil until the last 30 minutes. keeping the chicken covered allows the juices to run back down on the bird and self baste helping to keep the breast meat from drying out.
  10. *** if not using a baking bag take 1 coffee cup of cold water and 3T of flour and beat with fork.until.flour is dissolved….. pour in the bottom of baking pan…
