  1. Boil Chicken Breasts until done
  2. While chicken is boiling combine all other ingredients in a large pan on the stove.
  3. Continue stiring the ingredients often so they do not burn
  4. Once the chicken is done, shred it and add it to the mixture.
  5. Apply a thin layer of mixture to the inside of the torillas with a thin layer of shredded cheese. Roll them up and lay them in a line in a cake pan
  6. Pour remaining mixture over enchiladas
  7. Cover with tin foil and back at 350 for 15 minutes.
  8. Uncover, add shredded cheese over all of the enchiladas and bake for a couple of minutes until the cheese is melted
  9. We served it with taco rice, chips, sour cream and salsa.
