Cook the noodles according to packet instructions, drain well, rinse under cold running water, then set aside. Finely slice or tear the mushrooms, leaving any smaller ones whole. Peel the garlic and deseed the chilli, then finely slice. Peel the ginger and trim the courgettes, then slice both into matchsticks.

  1. Add Onion in oil and fry till soft then add garlic and fry for 1 min.
  2. Then add peas and carrot and fry for 1min.
  3. Add sauces and salt and black pepper.
  4. Boil noodles and mix with the sauce and mix well.
  5. Spread the noodles in pan and put an egg in the middle of noodles and cover for 10 min till egg cooked.
  6. Dish out noodles and sprinkle mix herbs on it and ready.
