  11. Prepare 750 ml - 1 l vegan/ veggie stock: i start with 750ml and add more if needed

  13. Make ready to taste salt and pepper
  14. Get Some chilli flakes and parsley leaves to garnish if you like

Lentils - Split red lentils are best in this recipe (for texture and appearance), but you can use green or brown lentils if that's all you have. They will take longer to become tender though and they won't thicken the soup in the same way as red do. If using green or brown lentils I suggest giving the finished soup a quick whizz with a stick blender to thicken it up before serving. Steps to make Red lentil soup - vegan:
  1. Heat the oil in a pan on medium heat. Add the onion and sauté for 10 mins til the onion is soft.
  2. Add the cumin, turmeric, cayenne and garlic. Sauté for a few mins.
  3. Add the carrots and celery. Stir for a minute or two. Add the potato. Sauté for a few mins.
  4. Add the lentils and the stock. Simmer for 25 mins or so until the vegetables are tender. Stir in the lemon juice and season to taste.
  5. Sprinkle some cumin or chilli flakes on top. And a few parsley or celery leaves. Enjoy 😋
