  1. Open and drain the tofu. Press the tofu using chopping boards and placing a weight on top of it (cooking books are good for this). Leave to stand for an hour.
  2. Meanwhile, prep the croutons. Preheat the oven to gas mark 6. Cut the bread into medium bite-size chunks. Toss the bread pieces with olive oil and salt and bake for 5-10 minutes until they are crisp. Shake the croutons halfway through cooking to make sure they cook evenly.
